What 'Bean-to-Bar' Really Means (And Why It Matters)

It’s a phrase you see right in our logo: Bean-to-Bar. It’s become a hallmark of quality in the craft chocolate world, but what does it actually mean? Is it just a fancy marketing term, or is there something more to it?

The short answer is: it’s everything.

Bean-to-bar isn't just a process; it’s a philosophy. It’s a commitment to crafting chocolate from scratch, starting with the raw, fermented cacao bean and controlling every single step of the transformation into a finished bar.

This is fundamentally different from how most of the world’s chocolate is made. The vast majority of chocolate companies, even many "gourmet" brands, are actually "chocolatiers" or melters. They purchase massive blocks of pre-made chocolate from an industrial manufacturer, melt it down, and then remold it or add other ingredients to create their products.

We do things differently. As a bean-to-bar maker, we embrace the entire journey.

The Harvest Craft Chocolate Journey: From Bean to Bar

When we say we make chocolate from bean-to-bar, we mean we personally do every step of this intricate process right here in our Tecumseh, Michigan workshop.

1. Sourcing: It all begins with the bean. We spend countless hours sourcing high-quality, organic cacao from dedicated farmers and co-ops around the world. We want to know where our beans come from and who grew them. This relationship is the foundation of everything we do.

2. Roasting: This is where the magic starts. We roast the raw cacao beans in small batches, carefully developing their unique flavor profile. A slight change in temperature or time can dramatically alter the final taste, bringing out notes of fruit, coffee, nuts, or rich brownie.

3. Cracking & Winnowing: After roasting, we crack the beans open and use a machine called a winnower to separate the outer husk (the shell) from the inner part of the bean, which we call the "cacao nib." (Fun fact: we use the leftover shells to make our delicious Chocolate Tea!)

4. Grinding & Conching: The cacao nibs are ground for days on end between stone wheels. This lengthy process, which includes a step called conching, does two things: it refines the chocolate until it’s perfectly smooth and silky on your palate, and it further develops the flavor, mellowing any bitterness and enhancing the nuanced tasting notes. It’s during this stage that we add the only other ingredient in our single-origin bars: organic cane sugar.

5. Tempering, Molding & Wrapping: Finally, the finished chocolate is tempered—a precise process of heating and cooling that gives the bar its beautiful sheen and satisfying "snap." We pour it into molds, let it set, and then hand-wrap each bar, ready for you to enjoy.

This meticulous, hands-on process matters for three big reasons:

Unbelievable Flavor: By managing every step, we can protect and highlight the incredible, inherent flavors of the cacao bean. We don't try to make chocolate from different countries taste the same; we celebrate their differences. This is how you get to truly experience the terroir—the unique taste of a place—in every bite. It’s the difference between a generic "chocolatey" flavor and discovering the vibrant raspberry notes of our Guatemalan origin or the rich, comforting notes from Uganda.

 

Complete Transparency: Because we source the beans ourselves, we know their story. We can ensure the farmers we work with are using ethical, sustainable practices and are being paid a fair, living wage for their work. Ingredient Purity: Our bean-to-bar process allows us to create pure, clean chocolate without the need for industrial additives. Many mass-market bars include emulsifiers like soy lecithin or stabilizers to make them easier to work with. We don’t need them. Our simple, two-ingredient chocolate is proof that when you have incredible ingredients and a passion for the craft, you don't need to add anything else.
