What Is Cocoa Butter, Really?
Despite its name, cocoa butter isn’t dairy—it’s the natural fat pressed from cocoa beans during the chocolate-making process. When cocoa beans are ground into a thick paste (called cocoa liquor), that paste contains both solids and fat. When pressed, it separates into two beautiful ingredients: cocoa powder and cocoa butter.
Cocoa butter is what gives chocolate its smooth texture, rich mouthfeel, and that signature melt. It’s what makes chocolate luscious and satisfying—not just sweet.
Why Cocoa Butter Matters
At Harvest Chocolate, we use undeodorized, single-origin cocoa butter, which means it retains the natural aroma and flavor of the cocoa bean it came from. Most large chocolate companies use deodorized cocoa butter, which is chemically treated to remove its scent and flavor.
We want our cocoa butter to do more than just provide texture—we want it to contribute to the flavor story of each bar. It’s rich, aromatic, and adds a beautiful mouthfeel while enhancing the chocolate’s natural complexity. It’s one of the quiet heroes of our milk chocolate, delivering that signature creaminess and deepening the flavor.
The Bean-to-Bar Difference: The Cocoa Beans
Like all our chocolate varieties, this one is handcrafted from scratch in our Tecumseh, Michigan shop. We roast each batch of cocoa beans with care to bring out their origin character—whether it’s bright and fruity, warm and toasty, or deep and earthy.
For our Oat Milk Chocolate, we created a custom house blend of cocoa beans designed specifically to complement oat milk and our cocoa butter. This blend brings a balanced mix of fruit, warmth, and depth that pairs perfectly with the natural creaminess of sprouted oats.
